These plump and juicy berries full of aroma!
Juniper berries are a natural addition to the game and fatty foods. The Scandinavians add it to their marinades when pickling beef and reindeer, the French use it with venison and in various pâtés, the Belgians with flambéed veal kidneys, and the Germans with sauerkraut.
It is easily crushed in a mortar, releasing a sharp aroma that can enhance many sweet and savoury dishes. Mixed with coarse salt and garlic, it can be rubbed on lamb, pork, wild birds and other game meat.
Since juniper has an intense flavour, no more than six to eight berries should be added at a time. The whole berries are usually removed before serving because if bitten into, they have a very intense, sour taste that can easily overpower the entire dish.
They also serve as a great addition to desserts. In combination with allspice, it gives a unique, excellent aroma to apple and pear cakes!
It goes well with many other foods including ever-so-popular gin. As a garnish in gin & tonic!
