Healthy ways to eat an avocado

If you have ever tasted avocado, then you surely know how creamy and tasty it is, nevertheless, you may have few additional questions on how to prepare and enjoy it. Just like bananas, avocado is harvested when unripe, firm and light green. When buying an avocado make sure that the fruit is not too soft, it could mean that it is too ripe and then it will not be equally good to use. Except for its softness, you can detect overripeness by removing the stalk, and if the fruit is dark and brownish under it, it means that it is overripe and you will not be able to use it after opening. It would be best to buy the avocado while it is dark green in colour and somewhat soft, as this means it is ripe just enough.

Although beloved in sandwiches or on toast, smoothies and salads, avocado offers much more. Here are four recipes that will underline the full potential of this magnificent fruit. 

THE HEALTHIEST CHOCOLATE TOPPING 

Required ingredients:

  • 1 avocado
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of Himalayan salt

Instructions:

  1. Combine all ingredients in a blender and process until smooth texture. 
  2. Prepared sauce use as a topping for pancakes, toast or fruit salads.

CREAMY PASTA

Required ingredients:

  • 1 soft ripe avocado
  • 400g shrimps
  • 2 tablespoon grated parmesan
  • 1/4 cup olive oil
  • Salt
  • Pepper
  • Lemon juice
  • 2 garlic cloves
  • 1/4 cup chopped spring onion
  • 1 teaspoon sweet red paprika
  • 400g pasta

Instructions:

  1. Combine avocado, lemon juice and parmesan with a hand mixer. After a minute add 2 tablespoons of olive oil.
  2. Season with salt and pepper and set the mixture aside.
  3. Cook pasta in boiling water and add some olive oil to a frying pan. 
  4. Sautee chopped garlic and add shrimps.
  5. After few minutes add spring onion and paprika. 
  6. Combine pasta, shrimps and avocado cream together and serve.

GREEN SOUP

Required ingredients:

  • 3 cups water
  • 2 avocados
  • 1 tomato
  • 1 small cucumber
  • Half diced courgette
  • Basil and dill to taste

Instructions:

  1. Combine water, avocado, tomato, cucumber and basil in a blender.
  2. Process well and pour on a serving plate. Garnish with remaining diced avocado and courgette. 

BROWNIE FOR ALL CHOCOHOLICS 

Required ingredients:

Instructions:

  1. Preheat the oven to 140 degrees.
  2. Beat the eggs, add sugar and then mix everything well.
  3. Add remaining ingredient and mix until well combined. Pour the mixture into a baking dish.
  4. Bake for 50 minutes. (It's best to use a toothpick or fork to test if the recipe is completely done.)
