Made from only two ingredients, white rice flour and water, these versatile noodles can be stir-fried, cooked in soups and combined with all sorts of sauces.
With their low sugar, caloric and fat content, rice noodles contain protein and dietary fibres important for a varied and balanced diet. Although, bear in mind that the method of preparation can increase the fat level. For example, if you cook and fry them in the Pad Thai recipe, the fat will rise significantly because the rice noodles absorb the fat of what they are being cooked with. If you want the amount of fat to remain low, cook them in soups or steam with vegetables.
Naturally gluten-free, rice noodles are a particularly great choice for everyone suffering from coeliac disease.
Soak in cold or hot water for 30-45 minutes before use.
