Note:
Neutral taste. Plant-based substitute for gelatin. Suitable for vegans. Agar is derived from red algae and gels only when cooled to about 40°C! Sour fruits like currants or quinces should be mixed with sweet fruits. The acidity of the fruit can affect the gelling ability. Pure lemon juice will not gel.
Instructions for use:
1 teaspoon (5 g) is equivalent to 6 sheets of gelatin and is sufficient for 500 g of fruit or 500 ml of liquid. Mix the agar well with cold liquid and let it swell for 1-2 minutes. Then cook for at least 2 minutes while stirring continuously! Remove from heat, let it cool slightly, and proceed with the recipe.
