Gelling agent: apple pectin (E440) (unamidated).
Mix 1kg of peeled and finely chopped fruit with a mixture of 100g of sugar and 1 bag of apple pectin in a large pot and bring to a boil. Add the remaining sugar (400g) and heat while stirring. Boil the mixture for another 3 minutes and then pour into clean jars, close the lids and turn upside down for about 5 minutes.
Tip: do a gelling test after each cooking. If the fruit is very sweet, add a little citric acid. For jelly, use 750 ml of juice. Do not use the juice on thawed fruit.
Store in a cool and dry place.
