We bring you the brownie recipe that is made from a vegetable - butternut squash.

Although is most often associated with Halloween, gourmets appreciate it primarily because of its culinary potential. Traditionally, pumpkin is used to make thick soups, various stews and compotes, and the irresistible pumpkin strudel, nowadays sweet dishes with pumpkin are becoming increasingly popular.

Butternut squash - fruit or vegetable?

For everyone who has tried a few desserts with butternut squash, it is clear why botanists prefer to classify it as a fruit.

Most sweet dishes with pumpkin first require the preparation of puree, and you can prepare it in several ways. You can bake the seedless halves of the pumpkin in the oven or you can process them peeled and sliced by cooking or steaming. However, it is worth noting that every true gourmet will still prefer baking in the oven, as this is the best way to develop and preserve the taste of pumpkin. After heat treatment, the pumpkin is peeled if necessary and finely chopped in a blender, sieve or hand mixer.

Rich in nutrients, butternut squash is prized for its high vitamin A content (which the body can transform into carotenes). Butternut squash provides a daily amount of vitamin A in one serving.

Ingredients:

  1. Combine butternut squash puree, hazelnut spread, eggs, maple syrup and vanilla. 
  2. Add flour, baking powder, cocoa, cinnamon and salt.
  3. Mix in half of the chopped hazelnuts, sprinkling the rest over the top.
  4. Bake at 180 degrees for 25 minutes.
