Cassava or tapioca is a plant native to Central and South America, but is now also grown in large areas in Asia and Africa.
Tapioca is a gluten free food, so even those who are sensitive to flour can eat it safely. It also does not contain lactose, so it can be used in lactose, milk-free diets.
Tapioca pearls usually come to mind in the form of tapioca pudding, which we can not only consume on our own, but also as a cream for cakes and pies, but it can also be a decorative element for a more special dish. Due to its water-absorbing capacity, it can also be used as a thickener or even made into a soup filling (it looks good in fruit soup).
Suggested use:
To make the tapioca custard, first soak the tapioca pearls in water or vegetable milk for 10-15 minutes, then season as desired, simmer, stirring constantly, until thickened (about 10-15 minutes). Allow to cool down.
