Wheat gluten*

Suggested use:

Mix 100 g of the mixture, add a pinch of salt and 100 ml of cold water, shape the dough and leave on the side for 15 minutes. Cut into thin slices (approx. 5 mm), boil in 1 litre of water or stock for 15 minutes and drain. Seitan can now be fried or further processed as desired.

Tip: add 10 g of breadcrumbs for better consistency. When used as an ingredient for baking with low-protein flour, add 5% of the mixture to the amount of flour.
