Miso paste is a fermented product from soybeans, salt and a specific "koji" culture. The fermentation process can last from several months to a year, and the length of fermentation will affect the colour of the paste and its taste.
Hikari miso paste is a light paste obtained from organically grown ingredients. The shorter fermentation process is the reason for the lighter colour of the paste and its mild taste.
Thanks to its mild salty, umami taste, Hikari paste is easier to combine with various dishes like salad dressings, sauces or the famous miso soup. When using miso paste in hot dishes, it is noteworthy to add the paste at the end of cooking so that the positive properties of the paste remain preserved.
