Although most commonly poured over your favourite pasta dish, pesto may be easily replaced with other food such as potatoes as we will show you today. A delicious combination of these ultra-crispy smashed potatoes with spinach pesto will be favoured by everyone, ageing from 7 to 77. 

Made from various super ingredients, this pesto will immediately strengthen your immunity and enrich the flavour of your lunch or dinner. 

Green, greener, greenest potatoes ever! Enjoy!

Instructions:

  1. Preheat oven to 170 degrees.
  2. Cook potatoes for 10 minutes in 4 cups of boiling water.
  3. Set aside to cool down and prepare pesto from spinach, basil, nutritional yeast, walnuts and salt in a blender.
  4. When blended, drizzle with olive oil to desired texture of pesto.
  5. Arrange potatoes on the parchment paper and crush them, keeping them in one piece.
  6. Bake them dry for 15 minutes, add pesto and bake for another 15 minutes.
