You are only 10 ingredients and 40 minutes away from completely unusual mashed potato. 

Enough time to make a delicious and flavourful lentil and mushroom sauce. Creamy and rich, this sauce can even be eaten on its own like a stew. Full of protein and fibre, suitable for vegans and all those who eat healthy and high quality, this sauce offers a getaway from the classic recipe in which mashed potatoes are complemented by creamy spinach.

Instructions:

  1. Heat some olive oil in the pan and add shallots. 
  2.  Add mushrooms and soy sauce, reduce the heat and add water.
  3. Cook for about 5 minutes, season with salt and pepper.
  4. Add lentils, thyme and 2 cups of vegetable broth. When it starts to simmer, reduce the heat and cook for about 20 minutes.
  5. Make mashed potatoes from cooked potatoes. 
  6. When the lentil sauce is creamy enough and the lentils are soft, you can still season to taste, add tomato concentrate and then 2 tablespoons of puree for density.
