However, we Mediterraneans decided to enrich this wholesome dish with a truly special herb. It inhabits our forests, has an unusual aroma and is very healthy. You are guessing? Wild garlic!
It is time to prepare wild garlic falafel, a recipe that completely stands out of the list of those annoying snacks.
Falafel is a classic meatless dish based on chickpeas or broad beans. It is most often served with vegetables, serves more as a substitute for meat, and if you want a lighter meal you can eat it with some mild sauce and salad. First made by Egyptian Bedouins, and except in North African countries and the Middle East, this healthier fast food has become increasingly popular around the world lately. Nowadays served with vegetables, french fries, as a substitute for meat in kebabs.
Wild garlic or ramp is a wild-grown plant known for its detox properties and shows antibacterial and antiviral features as well as a positive impact on blood pressure and cholesterol. As only a short period can be picked in nature - the solution for prolonged enjoyment of its perfect taste is found in the wild garlic. Although harvested in April in inaccessible areas of the mountain or moist parts of the forest, feel free to replace it with the dried version that will fit perfectly in this dish.
Crispy on the outside, and soft in the middle, wild garlic falafel can be served as an appetizer, side dish or a snack when hosting friends.
Chickpeas, one of the favourite beans, are the main ingredient of every falafel. In addition to protein, they also contain folic acid, vitamin B and minerals. To prepare falafel, it is necessary to pre-soak legumes, and after they soften, together with the other ingredients, grind them into a puree with a hand blender. With the addition of spices, you can play with falafel, and sometimes add garlic, cumin or tandoori mixture of spices. Today we are using wild garlic to surprise everyone’s palate.
