Healthy and affordable spring vegetable stew that is easy to make

With warmer days approaching, city markets are becoming greener and full of locally produced food!

Given the abundance of spring, colourful, thick, clear or creamy soups are the perfect choice for busy workdays, but also for all those who do the work from the home office. You can also chop the vegetables in advance, just put them in the pot and let them simmer while doing all those other, important, everyday chores. It really can't be simpler than that.

After all, warmer days call for food that is easier to digest simultaneously helping getting rid of those unwanted weight accumulated during cold wintertime.  In addition to being helpful in losing accumulated ''winter fat'', this stew is kind to your wallet as well. What else could we ask for!?  

Another reason that this stew is fantastic is that there are no thickeners, no flour, only vegetables!

Instructions:

  1. Sautee onion and garlic, then add carrot and grated celery. 
  2. Add sliced leek and diced potato.
  3. Season to taste, cover with water and simmer for 20 minutes.
