Shoyu is a mild Japanese soy sauce made from soybeans, wheat, and koji (a unique Japanese fungus). It is often mixed with Tamari sauce, which is quite similar, but the key difference is that Tamari contains only soybean paste and sea salt, making its flavor stronger and sharper, while Shoyu is made from soybeans, sea salt, and roasted wheat, giving it a milder flavor.

Due to its versatility, Shoyu has been adopted by many other world cuisines. It can be used in soups, stews, sauces, salads, braised vegetables, and during the summer season, its sales increase as it is used as a quick and exceptionally tasty marinade for grilling.
