Carob powder is made from the seeds of the carob tree by drying and grinding. It is very similar in colour and texture to cocoa, so it is mainly used as an alternative.
Carob powder is gluten free and has a very high fibre content and a much lower fat content than cocoa powder, so those who want to lose weight should consider carob over cocoa if they want to make a light dessert.
