An indispensable part of every Autumn's menu, mandarins are citrus fruit full of dietary fibre that works great in sweet delicacies like cakes and pastries. 

Reaching their full potential in peak season starting in October through December, mandarins have an impressive nutritional profile, packing vitamin C, protect our immunity during colds and flu season, help in maintaining a slim waistline, and what's more, they are deliciously tasty.

Believe it or not, mandarines are mood enhancers! Their scent is found to alleviate stress, depression and anxiety. Let's bake mandarin and almond cake and wave off all concerns and issues!

How it's made?

Instructions:

  1. Preheat oven to 160 degrees, place baking paper on baking sheet.
  2. Beat the eggs well and bring the mandarins (with the peel) to a boil.
  3. After 30 minutes of cooking the mandarins, take them out, let them cool, peel them by removing the skin and put the pulp in a blender.
  4. Add the mandarin puree to the eggs and mix all the dry ingredients in another bowl.
  5. Add combined dry ingredients to the eggs and mandarine mixture and bind everything together well.
  6. Bake for about 35 minutes and let it cool before serving.
